12 o'clock blessing

this is where i count my blessings. it doesn't have to be a million dollar blessing. i just want to list down the blessings i receive everyday. this is a way for me to show myself how i am truly blessed.

ampalaya, micro eggs

we were a bit tired from the office and thinking of just preparing simple food from whatever's in the ref.

fried ampalaya

1 big ampalaya
1 egg
1 TB cornstarch
1 small pack garlic and onion powder mix
salt and pepper

beat egg. mix cornstarch and the flavor powder mix. add salt and pepper to taste.
cut the ampalay into rings. remove the seeds and the soft cottony membrane inside.
dip the ampalaya on to the batter. fry till golden brown.

micro eggs

1 TB butter
1 TB oil
1 small onion, thinly sliced
1 TB leeks, sliced
half cup straw mushrooms
1/4 cup canned tuna chunks
1 medium tomato, cut into chunks.
3 medium eggs
salt and pepper

in a microwave proof bowl, add oil and butter. put the sliced onions and leeks into the bowl. microwave high for 1 minute. add the tomato, mushrooms and tuna into the bowl.

in a separate bowl, lightly beat the eggs. add 1/4 cup water. add more if you like it very moist. mix the lightly beaten eggs into the microwave bowl. mix it a little to distribute evenly the ingredients. add salt and pepper to taste.

pop the bowl back into the microwave. cook for 5 minutes power level at 70 percent. serve with rice or with nice bread.

make sure that the microwave bowl has enough space for the egg to expand. it usually doubles in size after cooking.
