12 o'clock blessing

this is where i count my blessings. it doesn't have to be a million dollar blessing. i just want to list down the blessings i receive everyday. this is a way for me to show myself how i am truly blessed.

chops with everything

we had chops with everything last night. actually, this may be named: chops with whatever's left in your cupboard.

half kilo pork chops
2 tablespoons minced garlic
medium onion, chopped
leeks, sliced
3 medium potatoes, chopped
1 large carrot, chopped
calamansi (small native lemon), squeezed
soy sauce
oyster sauce
catsup
bottled barbecue sauce

combine calamansi, soy sauce, oyster sauce, catsup, bottled barbecue sauce, salt and pepper, half the minced garlic, half the chopped onions. taste and adjust to your liking.

marinate the chops for 10 to 30 minutes at room temperature.

fry the potatoes till translucent and a bit brown. set aside.
remove the chops from the marinade. set aside the marinade.
fry the chops from where you fried the potatoes. when the chops changed color to reddish brown, remove and set aside.

from the same pan where you browned the chops, saute garlic, onion and leeks.

add the potatoes and carrots.
add the fried chops.
pour over the remaining marinade.
simmer for 20 minutes. add water if needed.
adjust salt and pepper to taste.

this will taste better if eaten the next day when the meat had absorbed the flavors of the sauce.
