12 o'clock blessing

this is where i count my blessings. it doesn't have to be a million dollar blessing. i just want to list down the blessings i receive everyday. this is a way for me to show myself how i am truly blessed.

kare-kare magic

kare kare is a native delicacy favorite to all pinoys. it is a mix of tender beef, boiled vegetables, creamy peanut sauce and good servings of bagoong.

they usually use peanut butter as the base for the peanut sauce. but we found a better alternative and cheaper too.

the different stuff added that made this mix different is the coconut cream and the cheap toasted garlic peanuts found locally in a grocery store.

kare-kare sauce

2 packs instant kare-kare sauce in powder from
1 pack instant powdered coconut cream
8 small packs garlic peanuts, chopped coarsely
2 tablespoons chopped garlic
1 medium onion
beef broth
boiled beef cubes till totally tender

dissolve the kare-kare sauce according to package instructions. dissolve the coconut cream with half the liquid required from the package instructions.

saute the garlic till brown. add the chopped onions till soft. add the chopped peanuts and brown the nuts a bit or until the roastiness flavor is sensed.

add the kare-kare mix and coconut cream mix. stir quickly to prevent from sticking. if sauce becomes very thick, add beef broth to reach a manageably thick sauce.

add the beef cubes. simmer for 15 minutes. add patis or salt just to tickle the taste of the sauce.

sauce should be a bit bland as the bagoong will adjust the saltiness when served.
