12 o'clock blessing

this is where i count my blessings. it doesn't have to be a million dollar blessing. i just want to list down the blessings i receive everyday. this is a way for me to show myself how i am truly blessed.

went to office with my wife

i went out this morning to office together with my wife. we rode a cab and sat beside each other at the back.

my wife needs to go to Subic to fix some office assignments and i have to drop off ahead of her for me to walk to my office. i will miss my hunny.

we had dinner at people's palace with my brother and my wife. that saved us from the coup that started and ended at the Fort, 2 kilometers away.

eggs on eggs

i had a very interesting lunch today.

i made eggs on eggs.

this is a recipe made in just 15 minutes enough time to prepare before going to work.

Eggs on Eggs

1 fresh egg
1 red salted egg
1 stalk of leek
1 medium tomato

slice leek in slivers. saute in little oil. chop tomato and remove the seeds. add it to the pan together with the leeks. saute for 2 minutes. slightly beat the fresh egg. add a tablespoon of water to make it fluff on the pan. add the beaten egg to the leek and tomato saute. add immediately the chopped salted egg. season with salt and pepper.

hmmm.... i guess that only took 10 minutes. the salted egg infused a different texture to the soft scrambled egg producing a new dish: eggs on eggs!

dinner at people's palace

we had a nice dinner at people's palace. we were treated by our cuzz k. this is the first thai resto that i am very satisfied with. food is full of flavors. Usually, the thai resto that i have visited are either too sour or too sweet.

this one's very good. and price is surprisingly very affordable. The great interiors just intimidates u which fakes u thinking that the food are very expensive.

but it is not!!!!

Insurance tech stuff: RI vs. Facultative

I learned the difference between RI and Facultative.

Facultative uses a higher rate of ceded insurance. Distributed to multiple insurance companies. And covers high risk insurance.

RI (Re-Insurance) uses a lower rate of ceded insurance. Given usually to a single RI company. And covers only safe and not risky coverages.

my hunny gave me a macaroni salad for lunch. came from wendy's. it's a mac salad in a mayo dressing with jello.

I dunno why but there are a lot of pinoys who likes mac salad with two colored jello.

quiapo and santa's shorts

my hunny and i went to quiapo this weekend. quiapo is a popular market place where people go there to get great finds at bargain prices all year round!

we heard mass at the famous Black Nazarene cathedral.

then, running around, we found a pair of santa's furry and shiny shorts. i'll wear them on christmas....(or even not on christmas!)

we also got gifts for each other. we got cool pair of watches. mine is a diesel big round steel face. my hunny got an orange swatch.

we got home at around 4 in the afternoon enough for us to take a rest to start the work week ahead.

china luncheon meat

we had ma-ling for lunch. this is a luncheon meat very popular here. this is more saleable than SPAM. There is a slight taste difference from SPAM. But i guess Ma Ling is not trying to copy SPAM. They are just two luncheon meats of two different tastes.

Ma Ling is canned in round tins. I faked my hunny's portion by slicing it close to the shape of the rectangular Spam. I then got the shapeless trimmings as my own share of the meat.

I then pan fried them on good bacon oil till light brown. Over frying is also good if you want a hint of crunchiness in the bite.

I then checked our vegetable crisper and found good leeks. I chopped the leeks diagonally and browned them on the same pan.

Now we have Ma Ling that looks like Spam with generous toppings of caramelized leeks.

Insurance Tech Stuff: third party ruling

i have learned that a passanger riding in a vehicle who has no blood relation with the driver or the assured is considered as a third party.

this is important in vehicles involved with Third Party Liabilities (TPL).

Victim doesn't have to be outside the vehicle to be considered as a third party.

A friend, riding in the assured's vehicle, is considered a third party, and is covered with the Third Party clauses of a motor policy.

white pasta for kirby

my hunny's on-the-job trainee will have his last day today. we cooked pasta for him today to award his job-well-done.

we made a simple white sauce with the spaghetti.

Quick white sauce

1 tetra pack all purpose cream
250 gms bacon
250 gms chicken breast fillet
generous amounts of grated cheese
onion and garlic

Separately brown the bacon. then the chicken.

Saute garlic on a teflon pan till golden brown using the good bacon fat. add onions. add the grated cheese and melt till it reaches a rough smooth texture (-figure that out). Add the cream. Add fresh full cream milk. simmer till a bit thick or till it reaches your desired consistency. Then add coarsely chopped bacon and coarsely chopped chicken fillet.

Actually, all these stuff are just left overs found stuck in our ref. Enjoy!

sisig puso ng saging

we went to san luis last weekend.

my hunny got her braces adjusted.

we had puso ng saging sisig. this is a native vegetable meal where in the heart of a banana plant is cut into strips, sauteed in generous garlic and onions, vinegar and soy.

Added in the banana heart is pig's blood. Pig's blood here is a regular delicacy in the country.

The secret in this delicacy is the right combination of vinegar and soy which should produce a mellow flavor of soy and tanginess.

We also got new mugs for us as we just ran out of glasses in the kitchen.

the other way around...

my hunny's not feeling well and i was giving her the meds that she needs. last night, everything went the other way around. i wasn't feeling well. the it was my baby who took good care of me and pampered me till morning. now i'm feeling better and my baby's feeling better too.
